Holstein Beans?

Our Midwest perspective would have lead to a different name, but West coast vision seems to have influenced this legume's moniker. We grew these pretty Yin Yang, aka Orca, beans from starter beans given to us by a seedsaving friend. We let the entire crop mature into dried beans. We plan to eat a few and save some to plant again next year. In the meantime we will admire them in a jar on the kitchen shelf.


It's not rocket science, but there does seem to be a fear of failure among bean prep novices. Rancho Gordo, creator of Heirloom Beans, a wonderful book given to us by a very thoughtful neighbor, has simple instructions that will relieve any bean cooking anxiety one might have. No fear!
